While we were on vacation, we had a pizza night. Well, guess who forgot to pack stuff for pizza? This girl! Luckily, we had flour and yeast, so I was able to make my own pizza crust, but, we had no sauce, no toppings prepared, and had to do everything on a whim. I was pleasantly ahhhhmazed at the culinary creation I had invented on the spot!
What you need:
1 avocado
1 cup spinach
1/4 cup almond or soy milk
1 tbsp nutritional yeast
1 tbsp BBQ sauce
1/8-1/4 cup diced red onion
1/4 cup diced green pepper
1 tomato sliced
1 vegan pizza crust
The steps:
Preheat oven to 350
Blend avocado, spinach, non-dairy milk, nutritional yeast, and BBQ sauce in a blender or food processor.
Spread blended mixture over pizza, just as you would with a tomato sauce.
Add toppings.
Optional: Sprinkle with nutritional yeast
Bake for 15 minutes, or until the bottom of your crust is golden brown.
