My daughter turned 1 last month and thanks to Pinterest, we threw the perfect Race Car Garage birthday party. I had been researching all the fine details for months and come party day, everything went together smoothly with the help of my mother-in-law. Just as I would like my non-vegan friends and family to offer foods I could eat at their events, we did the same for my daughter's party. Salad, fresh fruits and veggies, hummus, pita chips, veggie patties, and the cake were the Vegan options we offered, while the non-Vegan options included chips and hot dogs. Everyone appeared to be pleased with our menu offerings and we never had a single complaint. In fact, the cupcakes were a hit! I used my favorite Cinnamon Swirl Snickerdoodle Cupcake recipe. I found Vegan ice cream cones at Sprouts and placed the cupcake batter in the cones (another great idea from Pinterest). While the cake didn't stick to cupcake paper like they normally do because they were in the cones, the cones were a little on the soft side, which I am not sure if that was due to them being out for hours before they were consumed, or if it was just bound to happen. I will play around with this idea more in the future to see if I can find some more suitable cones.
For my daughter's cake, I used the same recipe, but substituted the oil for soy yogurt and reduced the amount of white sugar by about 25%. The cake was dense, but it was full of flavor.
I also added 1 strawberry to the cake frosting to give it a light pastel pink color and to be a little more pleasing to the pallet. My daughter loved the cake, and that is what mattered the most!
